Hello. Bonjour. Hola. Ciao. Guten Tag.

My name is Rebekah and I'm an enthusiast for anything that has to do with health, nutrition, wellness and of course, food.  I am loving life and doing so by being a certified health coach and plant based chef.  My passion is to share brain food and tips for a balanced lifestyle any moment I can to anyone who is willing to listen.

I grew up in rural Pennsylvania and graduated from Penn State University in 2013 with a Bachelor's degree in business marketing and a minor in hospitality.  During college I was diagnosed with celiac disease and had no idea how to manage it.  There were articles about living a gluten free life and gluten free recipes on Pinterest but none of it seemed to sink into my foggy brain and I had no desire to learn about it.  I was in denial for years.  I kept eating what my body rejected.

After I graduated college I immediately began working at a beautiful four star hotel managing its flagship restaurant but I still lived in a foggy brain.  I would go through the motions of life but nothing phased me.  I was unhappy.


In 2015 I finally made the choice to go 100% gluten free for my health and I didn't look back.  I quit gluten cold turkey.  Who was I?  I wanted to learn more about the science of food and nutrition and how it can help the body. After months of reading self help books and working out I transformed into the healthiest version of myself, physically and mentally. I lost 70 pounds and fell in love with the art of cooking and combining as many wholesome foods as possible to make healthy food taste delicious.  I discovered a passion for health and wellness. 


In 2017 I enrolled in the Institute for Integrative Nutrition (IIN) and learned so much about a holistic approach to life and overall wellness.  I was loving every lecture, recipe, worksheet, and discussion.  Unfortunately during my time attending IIN I suddenly became very ill.  After a trip to the emergency room, multiple doctor's visits, and a surgery to confirm what was going on I was officially diagnosed with endometriosis.  My doctor educated me on an "endo" diet which removes gluten, dairy, soy, and eggs. I was devastated. I had already cut out one major allergen. This time around I grew wiser with this diagnosis and took complete control of my life and my diet.  I was fully aware.

In 2018 I graduated from IIN and became a certified health coach.  I coached a few clients and loved every second of it.  My passion for food and for wellness could now tie into my passion for helping others and teaching.  


Later that year I enrolled in culinary school and became a certified plant based chef creating recipes full of nutrients and fuel. I enrolled to become a better cook for myself and to help others learn how to cook for themselves.  I felt like a wizard in the kitchen with the amount and complexity of what I was creating.  It was awesome!


After graduation I reflected back on my journey and how far I have come. I learned throughout my health journey that every day is a chance to start over.  Anyone can make a change and transform into their ideal self, no matter what.

In 2019 I read an article that women who were diagnosed with endometriosis had an eight year period of being misdiagnosed with gastroenterology diseases.  I went to my doctor to figure out some more details and she said the easiest way to test for it would be to eat gluten.  So I did.  And nothing happened, absolutely nothing.  I felt great!  So I continued to eat it and determined together with my doctor that it was my uncontrolled endometriosis causing so many stomach issues 12 years ago! 

I now focus on gut health.  Making sure the body is balanced with probiotics and prebiotics with food and supplements.  There is a multitude of fun gut health facts that I want to share with the world!

I now take great pride in who I am and what I do. I want to do the same for others, help them through what they think they cannot achieve.  If I can do it, anyone can do it.
